Henke Sparkling Chardonnay ages close to three years before the sediment (lees) must be consolidated for removal. The bottles undergo a process known as riddling (remuage in French). In this stage Joe puts the bottles in special racks called pupitres (riddling racks). This places the bottles with the cork pointed down. Several time, every few days the racks are given a slight shake and turn and causing sediments to drop towards the neck of the bottle. After weeks of repeating this process, the sediment settles to the neck of the bottle and the wine is gently placed back in cases and carried to the cold room to solidify. Joe then opens every single bottle with a bottle opener and the pressure jettisons the solidfied sediment out of the neck of the bottle. Friends gather to help complete the bottling (disgourging/dosage) process.
